A good way to expand vocabulary and creativity -- as well as to keep kids amused while traveling -- is to take the letters from the license plates of other cars, and create a phrase using those letters as the initials for the words of the phrase. (This works best for license plates with three or more letters.)
For example, my license plate has the letters UFJ on it, from which one might make the phrases "Used For Jam" or "Undertake Future Journeys" depending in the age and vocabulary of the participants.
Participants can either "challenge" each other by choosing plates alternately, or to see who can come up with the first or cleverest phrase.
Good for kids (and parents) of any age who know the alphabet.
